The Sassy Red Velvet Cream Cheese cookie was created after a regular client asked if I could do something with cream cheese. At that time I had not used cream cheese on a cookie so I was intrigued by the idea when it was mentioned to me. I spent a few days racking my brains as to how to use the cream cheese and for some unknown reason I had the idea to sandwich it between a Red Velvet cookie.
However even though I was happy with the end result, I felt it was not complete somehow. I did not want to add icing or frosting to the top of the cookie as that would mask the vibrant color of the Red Velvet cookie. That's when I decided to spread a little cream cheese on top. But once again I hit a snag when I realized that cream cheese would not set so when I piled the cookies on top of one another in their cello bags the decorative top would be ruined.
So I went back to the drawing board for a third time. This time I had the idea to put a Red Velvet heart on top of the cookie and I also added some icing sugar to the cream cheese to help it set a little so that it would not be so sticky. Turns out that was a great idea, it really worked. I was then able to stack the cookies in cello bags without smudging the cream cheese topping.
